Even a slightly overcooked piece of salmon beats an undercooked chicken breast.     Heat your oven to 200ยฐC (390ยฐF). Line a baking tray with parchment paper. Take salmon out of the fridge 10 minutes before cooking โ€” room temperature fish cooks more evenly.

    In a small bowl, whisk honey, soy sauce, sesame oil, garlic, and ginger until combined. Taste it โ€” it should be intensely flavoured because it'll dilute slightly as it cooks.

    Place salmon skin-side down
    Lay the salmon fillets on the lined tray with the skin facing down. This protects the flesh from the direct heat of the tray and helps it cook evenly.

    Glaze generously
    Spoon the glaze over each fillet, making sure it coats the top and sides completely. Use every drop โ€” don't hold any back.

    Bake for 12-15 minutes
    Slide the tray into the oven. Bake for 12 minutes for medium (still slightly pink in the centre) or 15 minutes for fully cooked. Watch the edges โ€” when they turn opaque white, you're close.

Take the salmon out of the oven when it still looks very slightly underdone in the very centre. Residual heat will finish cooking it perfectly as it rests. Overcooked salmon is the biggest waste in home cooking.

Don't skip lining the baking tray with parchment paper. The honey in the glaze will bond aggressively with an unlined pan and you'll spend 20 minutes scrubbing it. Parchment makes cleanup take 10 seconds.

No mirin or sake? A tablespoon of rice vinegar plus an extra teaspoon of honey gives a similar sweet-acidic balance. Tamari works instead of soy sauce for a gluten-free version.
